Mark & Sue love their sheep. Their farm is in the picturesque Cumbrian village of Dufton. Here, the mixture of heather, sweet fellgrass, and low pasture summer grazing produces wonderfully flavoursome lamb, which we use to make our: Cumbrian Lamb Hotpot. (You might have noticed that we use the lamb from two different farms on our Cumbrian Lamb Hotpot. This is because it’s a very popular dish, but our farmers don’t produce on a large enough scale to provide us with all the lamb we need, so sometimes we source from two different farms, but the provenance is always traceable. Cryndledyke Farm is on the eastern fells of Cumbria’s beautiful Eden Valley. Mark’s family have farmed here for three generations. We met Mark on a breezy day and watched his cattle grazing freely on the lush spring grass. Mark’s cattle are kept out for as long as possible while the grazing is good, and in winter they eat cereals produced on the farm, during winter, producing wonderfully textured, tasty beef, which we use for one of our most traditional and tasty dishes: Fellside Beef Casserole.
